These days we’ve started weightlifting yet again (after one week’s break), so we were in the need of something to lift us up and give us energy for a hard workout. These little energy balls proved to be made for the task! Preparation is fairly simple, you don’t have to bake them, you won’t even have to use a blender, and the best of all – they are done in 5 minutes :).
Ingredients for Super energy balls (15-20 balls, depending on the size):
1 cup of desiccated coconut
1 cup of quick oats
1/4 cup of sesame seeds
1/3 of a dark chocolate bar (at least 70% cocoa)
1/3 cup of honey
1/2 cup of peanut butter (I used crunchy)
1 tsp of extra virgin coconut oil
cinnamon, a pinch
In a big bowl mix the desiccated coconut, oats, sesame and cinnamon. Cut chocolate into small cubes (you can also use 1/4 cup of chocolate chips instead) and add them to the bowl. Then add the honey, peanut butter and coconut oil. Mix everything until the mixture becomes batter like in consistency. You can then start to form balls. If the batter is sticky, wet your hands a touch to make the balls easier to roll. Place them on baking paper, making sure they do not touch and leave them in the refrigerator to cool for about 10 minutes.
Now all you need to do is try them! Enjoy :D!
